Its traditional recipe combines
select cereals with a slow fermentation process, resulting in unique digestibility and delicacy.

The term “pinsa” derives from the Latin pinsere, meaning “to knead” or “to stretch” a tribute to the artisanal preparation method behind this speciality. At Barlume, the highlight of the menu is the N’Duja pinsa, craft ed with care and passion by Chef Marcelo Tomás. This distinctive dish is made entirely from scratch, following a meticulous 24-hour artisanal process that ensures authentic flavour and an unforgettable dining experience.
